Renowned knife designer Jens Anso takes up his wooden spoon and drawing board and conjures up a full-bodied menu of the finest chef’s knives for gourmets with the MKM Prima series. The versatile gyuto is a typical Japanese kitchen knife for preparing vegetables, fruit, fish and meat. It is often compared to the European chef’s knife because of its similar dimensions. Compared to the better-known Santoku, the Gyuto has a longer and narrower blade, which is particularly beneficial for precise cutting of large items. In this version, the MKM Gyuto is equipped with a cutting blade made of X50CrMoV15 with a hardness of 55-57 HRC. Typical Anso is the handle made of olive wood, which eliminates the usual conventions in favor of modern, angular lines.
